Olive Flour Granola Bars

Ingredients

  • 90 gr Olive flour
  • 180 gr Fine oatmeal
  • 90 gr Fine coconut powder
  • 200 gr Demerara sugar
  • 5 gr Cinnamon powder
  • 5 gr Baking powder
  • Pinch Salt
  • 150 gr Vegetable oil
  • 80 gr Natural maple syrup
  • 35 gr Natural peanut butter

Preparation

  1. Combine dry ingredients in a large bowl. Thoroughly mix together the olive flour, fine oatmeal, fine desiccated coconut, demerara sugar, ground cinnamon, baking powder, and salt. Ensure all the dry ingredients are evenly distributed.
  2. Incorporate wet ingredients: vegetable oil, pure maple syrup, and natural peanut butter into the bowl of dry ingredients.
  3. Mix well the wet and dry ingredients together until a consistent and well-combined mixture forms. Ensure there are no large clumps of dry ingredients remaining.
  4. Place one sheet of baking parchment (or baking paper) on your work surface. Transfer the mixture onto the parchment. Place another sheet of baking parchment on top of the mixture.
  5. Use a rolling pin to evenly spread and flatten the mixture between the two sheets of baking parchment to your desired thickness for the bars (recommended 0.5-1.0 cm).
  6. Carefully remove the top sheet of baking parchment. Transfer the baking parchment with the flattened mixture onto a baking tray. Bake in a preheated oven at a moderate temperature (approximately 180°C or 350°F) for 20 minutes, or until lightly golden brown and set.
  7. Once baked, remove the baking tray from the oven. While the mixture is still warm and pliable, use a sharp knife to cut it into bars of your preferred size and shape.
  8. Leave the cut bars on the baking tray to cool completely. This will allow them to firm up and become easier to handle.
  9. Once fully cooled, carefully transfer the bars to an airtight container for storage. They will keep best in a cool, dry place.
