PhenOlives was born from a shared mission within Innovalley, an innovation hub nestled in Israel’s Valley of Springs. Several years ago, alongside our sister company, the Assi Olive Oil Mill, we faced a challenge that affects the entire olive oil industry: the overwhelming volume of waste left behind after pressing olives.
With only a small portion of each olive becoming oil, the vast majority — around 85% — is left as waste. This byproduct rapidly oxidizes, producing foul-smelling emissions and polluting soil and water when stored in open pools. Globally, olive oil production generates tens of millions of tons of waste in just a few months each year — creating an urgent environmental challenge for producers and communities alike.
Driven to turn this problem into opportunity, we developped and patented a chemical-free process that prevents oxidation at its source. Today, PhenOlives is the only company in the world offering a solution that stops olive oil waste from oxidizing — transforming a global burden into a new path for sustainability and innovation.
