Olive Flour Crackers

Ingredients

  • 120 gr Sunflower seeds
  • 120 gr Flax seeds
  • 60 gr Chia seeds
  • 55 gr Pumpkin seeds
  • 55 gr Sesame seeds
  • 70 gr Olive flour
  • 1 tablespoon Corn starch
  • 2 tablespoons Brown sugar
  • 1/2 teaspoon Salt
  • 3/4 teaspoon Ground black pepper
  • 375 ml Boiling water
  • 1/4 cup Olive oil
  • 2 tablespoons Raw tahini (full or regular)

Preparation

  1. Preheat oven to 160°C with Turbo Mix all dry ingredients in a bowl.

  2. Mix all the wet  ingredients separately.

  3. Pour the wet ingredients over the dry and mix vigorously for a minute. The mixture should be quite runny.

  4. Line a flat oven tray with baking paper and pour half of the mixture into the tray (about 475gr of the mixture). Spread the batter to obtain a uniform and thin surface. Leave for 10 minutes.

  5. Bake for 45minutes. Recommended to rotate the tray after 25minutes.
    When done, take out the baking paper with the cracker from the tray, cool well and break into small portions of desired size.

    ***If only one tray is available – the second half of the batter should be handled as follows:
    Add 2-3 tablespoons of boiling water and mix well. Pour the batter on the hot tray (from baking first half) and bake 40 minutes without leaving 10 minutes rest.
