Vegan Sweet Buns with Spelt flour and Olive flour

Ingredients

  • 375 grams Whole spelt flour
  • 125 grams Olive flour
  • 10 grams Dry yeast
  • 120 grams Brown sugar
  • 5 grams Salt
  • 240 ml Lukewarm water
  • 60 ml Olive oil
  • 65 grams Apple mash

Preparation

  1. Combine Dry Ingredients in a large mixing bowl. Whisk or stir thoroughly to ensure the dry ingredients are evenly distributed.
  2. Using a wooden spoon, spatula, or your hands, mix the wet ingredients into the dry ingredients until a shaggy dough forms. Continue mixing until most of the dry ingredients are incorporated.
  3. Turn the dough out onto a lightly floured surface. Knead the dough for 5-7 minutes, or until it becomes smooth and elastic. If the dough is too sticky, add a little more spelt flour, one tablespoon at a time.
  4. Lightly oil a large bowl. Place the kneaded dough in the bowl and turn it to coat with oil. Cover the bowl with a clean kitchen towel or plastic wrap. Place the bowl in a warm place and let the dough rise for about 1-1.5 hours, or until it has doubled in size.
  5. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
  6. Once the dough has doubled, punch it down to release any air. Turn the dough out onto a lightly floured surface and divide it into your desired number of portions (e.g., 12-16 for buns, or shape into a loaf). Shape each portion into your desired form (buns, loaf, etc.).
  7. Place the shaped dough onto a baking sheet lined with parchment paper, leaving space between each piece. Cover with a clean kitchen towel and let rise for another 30 minutes.
  8. For the topping: mix 3 tablespoons Silan (date syrup) with 1 tablespoon coconut oil and spread sesame seeds
  9. Bake the dough in the preheated oven for 15-25 minutes, or until golden brown. The baking time will depend on the size and shape of your dough. If making buns, they will bake faster than a loaf. The loaf is done when you tap the bottom of the loaf, and it sounds hollow.
  10. Remove the baked goods from the oven and transfer them to a wire rack to cool completely before slicing or serving.
